I always enjoy Erik’s puzzles; he always seems to bring something special to them. This one was no exception.

Just a minor correction: The state motto of Texas is “friendship”, which is the literal translation of tejas. “Don’t mess with Texas” is a slogan from an anti-littering campaign.
